Which headers do websites actually receive?

The full set includes User-Agent, Accept-Language, encoding support, cookies, and increasingly structured client hints. Reading the complete server-side list requires a server; this page shows the client-visible signals, which cover the identifying ones.

Can I change these headers?

Your language list follows browser settings, and extensions can override the user agent. Keep in mind that unusual header combinations make you more fingerprintable, not less.
